Using late harvest grapes, this liqueur Muscat is a luscious sweet, wine. Largely self fortified, it results in a much lighter style than stickys available today and is very similar to the Vin Santo styles from Italy. Aged for at least four years, it is best enjoyed with dessert or on its own after a meal.

Wileys Creek Shiraz Cabernet 2010
A lengthy ripening season intensified our reds in 2010. Aged in both French and American Oak, plum and spice characteristics have developed in this cabernet shiraz blend. The result is a well rounded, yet soft red that can be enjoyed now or cellared for the next couple of years. We suggest that this wine is enjoyed with traditional beef and lamb meals roasts, steaks, stews and of course full glasses and open fires. |

Consistent rainfall and warm dry conditions during ripening resulted in ideal growing conditions for this Semillon / Chardonnay blend. Citrus notes are complemented by a soft oak finish and results in a fresh, zesty wine ideally enjoyed with lighter style foods. |

Wileys Creek Traminer Riesling 2010
A fruitier style wine, Riesling has recently started to come back into fashion for its easy drinking style and consistent quality. Our Riesling, while still having a very pronounced fruity flavour , unusually has a spicy aroma, while the Traminer has contributed strong lychee overtones. This makes it a great accompaniment to spicy food such as Indian or Thai. |

Wileys Creek Sparkling Shiraz
Our preferred choice for sparkling red is shiraz and good quality shiraz at that. Good shiraz is inherently rich, and this one is no exception – deep crimson in colour with a fine balance between tannins; sweetness and a crisp, dry finish. It really is one of our favourite bottles here and if it’s not to your liking we really aren’t offended, it’s more for us. |

Silos Estate Floodplain Semillon 2009
Our Semillon is grown on blocks which are flooded during heavy rains, dumping rich alluvial soil which our grapes love. 2009 was also a great growing season and this wine is especially unique as it was picked on the day of our daughters birth (dont even ask). With intense citrus flavours of lemon and lime match it with just about any seafood it will complement it well. |

Silos Estate Telephone Cable Chardonnay 2009
In 2009, we deliberately picked early we were after a lighter, refreshing wine and lower in alcohol. We think we succeeded it has developed classic white peach and pear notes and surprisingly zesty character. This may have had something to do with the telephone cable that was accidentally dug up during the planting of this block. In any case, the bill from Telstra was pretty zesty. |

Silos Wild Ferement Chardonnay 2010
This wine has no yeast added it uses naturally occurring yeast on the grapes. The results can be hit and miss there are some truly dreadful wild ferment wines but we think this is really a winner. Steely undertones with a characteristic creaminess (through lees stirring) it has a terrific palate of peach/fig/citrus notes. It will get better with age, but is drinking well now. |

Silos Estate Cats Meow Rose 2010
This fresh, vibrant wine is a delicate fusion of pinot and chardonnay. Very complex for a rose, with hints of a variety of summer fruit, it is still light and crisp. And the name? The remains of the first tasting bottle were found the next morning in the paws of our msot popular staff member Bella the cat a good judge of wine we think. |

Silos Estate Squid Ink Shiraz 2008
Australia is famous for its Shiraz the world over and the terroire (the soil, climate and topography) in the Barossa and the Hunter particularly lends itself to the style for which New World red wines are known (one wine writer describing it as big, red and bloody). The Shoalhaven is far milder that other wine regions in Australia, and as a result our Shiraz while still retaining richness is a softer, full bodied Shiraz with a lovely long finish. Enjoy now but we believe it holds great cellaring promise. |

A more traditional port although lighter and fruiter with distinct burnt toffee and caramel aromas. Matured in oak, and typically 8 years old it can be enjoyed on its own or as an accompaniment to sweeter style desserts. |

A blend of late harvest Semillon / Sauvignon Blanc, this is a non-traditional port (its very velvety) with distinct white wine flavours. Oaked and aged for a minimum of twelve years and blended on-site. We have adopted a French sauterne style, and have made it to be enjoyed with cheeses or flourless desserts. |
